According to Carly Wickell from About.com: Cornflower blue is the most popular color for Sapphires although they come in many different colors.
An interesting find on Wikipedia is that the difference between Sapphires and Rubies is that rubies are only red and Sapphires are not red. They both share the same mineral corundum.
